Catch & Release Riverside Lunch: Falafel. When chasing steelhead (and other C&R fisheries), you generally don’t have ready access to fresh fish (for lunch). As such, I whipped up some falafel instead. I’d made some falafel mix ahead of time by running some rehydrated chickpeas and parsley through a food processor until finely chopped up. I then thickened the mixture with chickpea flour, seasoning with a splash of lemon juice, some cumin, and salt and pepper to taste. On the river, I fried the chickpea patties in oil until golden brown. Heating some pitas through on the pan, I added some tzatzkiki to the pita, alongside some arugula, sliced tomatoes and crumbled feta. For a plant-based meal, this definitely hit the spot 🌱👌🏻
